This is what Tì Deuchainn means, this batch is absolutely limited as we will not be creating more.
Tì Deuchainn is a stepping stone, a learning experience on our road to creating green tea.
If you have been here for a while you will know that it must be good or we wouldn’t be offering it 😉
Created on 13th June 2025, we did our best with not optimal equipment (hello small wok) to make a batch of green tea.
Our attempt to lock that green in… in batches did not result in a green tea, rather a tea that has more in common with an oolong.
Oxidisation is present, which brings in sweet fruity notes. Surprising and delicious.
But not a green tea.
Oolong is where I feel it is trying to belong, there is a pop of fresh bright green note, which tapers into a well rounded sweet fruity tea.
Straight from the Guisachan tea plants, Tì Deuchainn is super fresh.
Teas do tend to mellow with age, especially in the first few months, so it will interesting to see how this tea evolves.
It is such an incredibly smooth tea already.

Our airtight foil lined packs are a great container to store the young tea in as it locks in the aromatics within the leaves.
Also keeps out any strong smells which can leave these leaves tasting of something stored close by.
Use 2g of leaf to 200ml of water
Bring the water to boil, then leave to cool a minute and pour over the leaves.
Infuse for 2 minutes.
Leaves used this way can be reused up to 3 times, adding 2 minutes onto each subsequent infusion.
Use 5g of leaf to 150ml of water
Bring the water to 90c
Then pour over the leaves, wait 20 seconds and decant your tea.
Leaves use this way can be reused at 5 times or more, adding 10 seconds onto each subsequent infusion.
Store in a cool dry place away from sunlight.
