Guisachan Tì Grianach

Tì Grianach means “Sunny Tea” in Gaelic

A tiny one-of-a-kind batch created in 2025, a stepping stone in our journey to crafting Scottish grown green tea.

Created on 22nd August 2025 using modest equipment (yes, a small wok!), Donald set out to make a green tea, another batch of Ti Uaine.
Instead, what emerged was a tea leaning more towards oolong; refreshing, smooth and hints of sweetness reminiscent of a Taiwanese oolong.

This batch is extremely limited, only 400g was created, and will not be recreated. An insight into Scotland’s developing tea creations.

Tasting Profile

  • Aroma: Fresh, bright, slightly floral

  • Flavour: Smooth green freshness rounded by a soft sunshine sweetness

  • Texture: Incredibly smooth, soft-bodied

  • Finish: Rounded and lingering, with gentle sweetness

  • Best enjoyed: Hot, to appreciate the evolving character as it ages.

Brewing Guide

Western Style

  • 2g leaf per 200ml water

  • 95°C (boil then cool for 1 minute)

  • 2 minutes infusion

  • Re-infuse up to 3 times, adding 2 minutes each round

Eastern Style (Gong Fu Inspired)

  • 5g leaf per 150ml vessel

  • 90°C

  • 20 seconds for 1st infusion, +10 seconds each round

  • Re-infuse at least 5 times

(Note: This tea will evolve as it rests — flavours may mellow and develop with time.)

Storage

Store in airtight foil-lined packaging, in a cool dry place, away from sunlight and strong smells.
